Manual harvest. Total stalking. Pre-fermentation maceration for 8 to 12 hours. Vacuum press, fermentation at controlled temperatures (15ºC to 18ºC) in stainless steel vats.
Varieties: Touriga Nacional, Syrah, Aragonez, among others.
